Live Painter Each Thursday in February 2023

8 PM - 11 PM

Come enjoy the bar as Cheria Gillespie creates original paintings. She will be in the corner quietly working away at different canvases, adding to the ambiance and overall vibe of 5BAR.

Levi had the idea for watching live painting in the bar because his great-grandfather was a master painter, and Levi grew up around many of his scenic pieces. Taken from his inspiration in the 1950’s Europe.

“I’ve never written a bio before but I started painting during the pandemic since I was off from work and fell in love with the art I used to do as a kid. I like to focus on portrait paintings but really love capturing all aspects of the world with my paint brush. I mainly work with acrylic paint, but I’m always learning and expanding my craft.”

The 5 Love Languages, February 2023

Each month we're bringing you new cocktails that stem from a theme or idea, and for February we're excited to bring back the annual 5 Love Languages cocktail menu. Fun fact, John, a great bartender from the Rooftop on Hotel Goodwin, came up with the concepts for these cocktails.

Each drink on the menu centers it's ingredients, appearance and flavor from 1 of the love languages.

Receiving Gifts:

This is a 2-part cocktail, like giving and receiving a gift is usually from 1 person to another. So we used 2 ingredients that are sweet on their own, combining them together and stirring with ice till the balance is just right. Served with a small candy on the side for you to unwrap, like a gift.

Words of Affirmation:

This drink tastes like melted ice cream, with vodka, Luxardo Maraschino Cherry juice, cream, shaken and served with a candy heart and a special message for you.

Quality Time:

The idea here is spending a while, with someone worth your while.

Four Roses Bourbon, Thyme syrup, 3 dashes bitters, orange zest, thyme herb pinned to the side like a sidekick.

Physical Touch:

Some people love touch, and some really don't care for it too much. This cocktail captures both moods. The honey is smooth, sweet and adheres a long time, whereas the Poprocks are noisy and explode to push away.

Lemon Vodka, lemon juice, ginger beer, honey and Poprocks rim.

Acts of Service:

Mojitos are tasty drinks that some bartenders hate to make. They can take a while and need muddling, straining and lovely fresh mint garnishes. So the Mojito is it's own "Act of service," and with that as the basis for the inspiration we did a simple herb-swap and use basil paired with strawberry to make it extra special.

Rum, 1 strawberry, simple syrup, basil leaves, topped with ice and soda water.

Open Mic Nights

Open Mic Night at 5BAR, Beloit

Every Sunday from 7p - 9p

We are looking to bring artists together, the goal of this night is to explore music and ourselves together as a community. We are hoping it takes its own path and turns into an ever-changing platform for art, visual or otherwise. For now we are looking to host a classic open mic focused on music and short form poetry.

Hosted primarily by Adam of Earth to Clark, he was the host for Open Mic Nights back when 5BAR was the BOP (Beloit history for ya).

Bring your own instrument, we will have 3 mics, a small drum set, keyboard (actually looking for a donation please), and 1 community acoustic guitar. Must be 21+ to watch, if you are under 21 years old and want to perform contact us and let’s see about arranging something (legally, its a few steps for us).

Debut Food Menu

We wanna make it like grandma used to for us on those special days we didn't know were so special. The whole concept of the bar itself is a house-party and we think the food reflects that. It feels like walking into a Sunday night meal with your childhood friends and a full table.

Dino Nuggies $7

House blended sambal-kethcup (fermented chili paste), and dried herb ranch-like sauces dippies, six-nuggies

Pairing: Chocolate milk or hot cocoa. Miller High Life Pony bottles, its small and lasts just about as long at the 6 dinos. Something Fruity is also a good choice.

Tuna Noodle Casserole $11

Green peas, mushrooms, noodled noodles, crunchy Mrs. Fischer's chips topping. Best 11 buckaroos you'll spend tonight

Pairing: Classic Old Fashioned because it tastes like cold fall days and has a nice neutral palate cleanser for between bites.

Panic! At the Pesto $6

Blended roasted cauliflower, walnuts, kale, basil, lemon juice, parmesan cheese. Served with crostini for dipping. This is good enough to be a main dish.

Pairings: a Gold Rush or hot green tea.

Grilled Cheese Jammie Jams $12

Grilled cheese with roasted tomato, chihuahua-cheese, sharp cheddar, a smeared basil-berry jam blend, house-mayo (our handy guy Joe's recipe) on the outside.

Pairing: sour beer, red wine, Ginger Basil Lemondrop, chamomile tea.

Hummus Plate $5

That hummus is thick like Beyonce. Served with a side of air-fried pita chips, celery, carrot slices.

Pairing: chardonnay, dirty or Vesper martini

Chips & Salsa $4

Roasted tomato Lupe salsa, served with crispy tortilla chips we warm up on the pan as we prepare.

Pairing: Tecate, Dark and Stormy, soda with lime.

Mac N Cheese $9

Gooey slurry of parmesan, pepperjack, Velveta and chihuahua-cheese melty bases, shell-action. Oof, a kiss of mustard seeds. Some black pepper and turmeric powder. Ask about our Chex Mix crunchy toppers (sweet BBQ flavor, herbed ranch, or bacon bits).

Pairing: bubbles to help cleanse that palate, prosecco? Maybe a French 75 or mimosa?

Yo, Nachos? $5

We layered it for you. Freshly fried-up tortilla chips, layering both cheddar and chihuahua cheese, black beans, roasted salsa served warm too.

Pairing: Mezcal Margarita, Paloma, lemonade.

Creamy Peanut Snackers $4

Chopped carrots, celery, creamy peanut for dipping.

Pairing: black coffee, Peanut Butter Nitro Stout

Artichoke Crustinis $4

Four lil slidy-gooey goodies, served sizzling, for sharing or for one.

Pairing: Rum Manhattan, Last Word

Vegan Coconut Cashew Curry $8

Veggie bits (all kinds, depending what we have back of house), spicy curry, the good stuff.

Pairing: Cold Fashioned, Hot Toddy

Mini-Mediterranean Salad $6

Mixed greens, tiny sliced up tomatoes and cucumbers, black olives, a small drizzle of balsamic vinegar and a touch of feta crumblies

Pairing: Negroni, Balsamic Fig Soda

Amuse Bouchie (Steak or Shrimp) $8

Amuse bouche, your lil' tongue-treat if you will. It's a big ol' bite with lingering flavor, or just perfect for the slower eater. Charred notes, a basil and jam dollop on the steak option, avocado and cilantro when with shrimp. Why not try both?

Pairing: Mexican Firing Squad, Kolsch

Shreddin' Chicken Pita $8

Full pita that's air-fried, chicken shreds (so metal), with chihuahua-cheese melty, house-ranch, sriracha, tobasco drizzles

Banana discs, toasted rye bread, tiny figs sliced bits, a little honey bee drizz-drizz, a light cinnamon powder topping, sliced in half

Soft eggs, cilantro, chihuaha-cheese, flour tortilla, green bell peppers, white onions, house Lupe salsa, seared up. Add $1 for avocado, chorizo, chicken, or bacon.

5BRUNCH: Air-Fried Skillet $8

Base Hashed potato, soft eggs, cilantro, chihuaha-cheese, green bell peppers, white onions. Add $1 for chorizo, chicken, or bacon.

Organic Greek yogurt, house cooked granola... Whew let's type out all the good stuff: dried Door County Cherries, pomegranate bits, hemp hearts, peanuts, crushed cashews, walnuts, cinnamon, salt, caramel, honey, coconut oil, coconut flakes, oh and of course oats all roasted together. As you may have heard, yes, we are closing our doors for 2 months. The focus for this time will be employee training and some renovations. So many of you have asked how you can help that we decided to make a big blog post with all of the info. It would be a delight to have your handiwork be a part of our space. Here is a Beloit Daily News article about the shut down.

5BAR is always open to customer donations, some items may not be a fit for us, but we always appreciate when there is an offer. Our style is MCM 60’s

Items we are looking for include:

  • Patio furniture, umbrella tables, large thermometer, stringing lights

  • Telephones from the 50-70’s

  • Games like Connect 4, Operation, Klask

  • Vintage furniture like couches or side tables

  • Wonderful lamp shades

  • Loads of Lava Lamps

  • Mirror shadow boxes

  • Plants, always plants, they need to thrive in low lighting

Machines and tools we would like to borrow for 2 months:

  • Scaffolding (13’ tall)

  • Extension ladders

  • Concrete chisel, saw or jackhammer

  • Truck or trailer, for random dump runs

Buckets of tasks we are seeking to accomplish by September 1st:

  • Kitchen:

    • Demolish, removing (lifting) ceiling, allowing for storage above DJ Emu, expose brick wall down to bricks

    • Move hallway wall towards bathrooms, insert service window

    • Shelving for spirits

    • Water: (need insured contractor) mop bucket, dish washer, updated water heater, add water softener

    • Electricity: (need insured contractor) 220V for stove, 3 circuits for kitchen 1 along brick wall 1 along hallway wall and 1 spare single jbox for potential future needs

    • Lift ceilings

    • Frame, doors, paint, floors

5TASTINGS, Happening Each Monday in April

Hi, Levi the owner here. April is going to be a fun month. Each Monday we are doing a $10 flight for you to enjoy, yay.

$10 gets you a 0.5oz flight of 5 new spirits we don’t think you’ve tried before. This is not a pretentious tasting, its a chance to discover your new favorite spirit. And yes, we might even have complimentary snacks (if I can remember to grab them in time.. no promises).

I did some tasting today and this is what I noticed with them. Also if you want a full drink or full shot, here is the price.

  • April 4: 5WHISKEYS

    • Woodinville Bourbon Whiskey $7

      • Taste: oak, bread.

      • I chose this as the starting point for 2 reasons, (1) its from near where I grew up in Washington, yay. And (2) it’s a clean and simple start to tasting the other whiskeys. As you taste the next ones you will start to notice wonderful flavors that build in complexity.

    • Town Branch $7

      • Taste: The nose is mildly sweet. Notes of brown sugar and caramel, woody/oaky, orange zest, black pepper and bitter smoke finish.

      • Stands up well in an Old Fashioned or Manhattan, with cherry of course

    • Chicken Cock $12

      • Taste: Sweet corn, orange, grassy spearmint flavor at front and at finish.

      • This is a WILD one. I threw it in here because its SO different and a touch pricy to try and commit to a whole shot. I appreciate it neat.

    • Giant Whiskey $9

      • Taste: Honey, butterscotch, oddest sushi-seaweed and green tea tone that overpowers everything.

      • Okay, so this is NOT my favorite thing I have tasted, but, its so bizarre you gotta take a sip. I put it towards the end so it wont overpower the other whiskeys, then the sweetest one (Bubba’s) is next to help refresh your palate and end on a nice dessert vibe.

      • Pairings: pickle juice, AKA a “pickle back”

      • Taste: Neapolitan ice cream as whiskey, uses flavorings.

      • Taste: like a classic London Dry gin, with much more floral tones that are almost creamy. Changes color with acidic environments

      • Gin & Tonic, pour in the gin last to watch it change color

    • Drumshando Gunpowder Irish Gin $10

      • Ireland

      • Taste: citrus, star anise, black tea, coriander

        • From Flaviar: “The result of this passionate exploration is Drumshanbo Gunpowder Gin – unique, extraordinary and remarkable as the elusive creature PJ has occasionally glimpsed in the fields, the Drumshanbo Jackalope” (The Shed Distillery). The Gin has a fresh citrus taste and spicy notes of oriental botanicals.

          Gunpowder Tea or zhu chá, translated literally as "pearl tea,” is a type of green tea that has been slowly dried. These delicate leaves are then carefully rolled into shiny pellets.

          The flavor is bold and bright with a slight spicy freshness. The Chinese green tea gets its English name from its semblance to gunpowder. Gunpowder tea production dates as far back as the Tang Dynasty (618–907).

A Few Fun Oregon Chai Recipes

Part of what happens at 5BAR is recipe work with other brands. Either for fun, or for side-work to keep Levi the owner busy and learning more. Here is a little glimpse into some of that work that he does from time to time. Here Levi worked on some new Oregon Chai Unsweetened Chai Tea Latte Concentrate recipes. Some are easy and expected, but some are a little out there and fun, so why not share?

Iced Chai Horchata with Oregon Chai

Chai Grog

  • Classic hot chai applications

    • Real Honey Chai

      • 7oz Oregon Chai Unsweetened Chai Tea Latte Concentrate

      • 0.75oz honey

      • 7oz milk

      • Heat together, top with a cinnamon stick

        • Use a local or raw honey from your pantry and sweeten this drink to your exact preference. Add a slice of ginger on top to add extra spicy heat that infuses over time

    • Falltime Maple Chai

      • 7oz Oregon Chai Unsweetened Chai Tea Latte Concentrate

      • 1.5oz maple

      • 7oz milk

      • Heat together, top with a cinnamon stick

        • The maple makes this a cozy beverage aimed at the fall. Crisp air and smooth and sweet chai.

      • 1.5oz DaVinci Gourmet Sugar Free Vanilla Syrup

      • 7oz Oregon Chai Unsweetened Chai Tea Latte Concentrate

      • 1oz cream

      • Stir or shake together

    • Summer’s Eve Lemonade

      • 1oz Oregon Chai Unsweetened Chai Tea Latte Concentrate

      • 0.75oz Organic Blue Agave sweetener

      • 0.5oz apple cider vinegar

      • 1oz lemon juice

      • 8oz water

      • Fill with ice, top with Tajin or other chili flake seasoning

        • With just enough sweetness and spice, this drink tastes like that first day waking up to a weekend off and the sun already singing across a warming field.

  • Innovative mocktail concept(s)

    • Chai Mocktail

      • 4 dashes aromatic bitters

      • 1 sugar cube

      • 1 orange wedge

      • 1 cherry

      • Muddle all together, then add

      • 1oz Oregon Chai Unsweetened Chai Tea Latte Concentrate

      • 2oz soda water

      • Fill with ice, garnish with orange zest

    • Honey Chai Grog

      • 5oz red wine (or non-alcoholic wine option, or cranberry juice)

        • Great when hosting a party, can sit in a crockpot for an evening of enjoyment

    • Tropical Chai

      • 2oz Oregon Chai Unsweetened Chai Tea Latte Centrate

      • 2oz soda

      • 4oz OJ

      • 4oz pineapple

        • Tropical sour, spicy, bubbly soda texture. Add a touch of sugar or water if its too tart




    • Chai-Scream

      • 1oz Oregon Chai Unsweetened Chai Tea Latte Concentrate

      • 2 scoops vanilla ice cream

      • Dust cinnamon on powder on top

        • Swirl in the chai mix until it becomes a Chai Milkshake. You might want to double up on the recipe right from the start




  • Hor-Chai-ta

    • 3oz Oregon Chai Unsweetened Chai Tea Latte Concentrate

    • 9oz coconut milk

    • 1 drop vanilla extract

    • 3 dashes of cinnamon powder

    • 0.5oz sugar or demerara (optional)

    • Fill glass with ice and pour in mixture

      • This is very similar to horchata but has many more layers of spices and a clear black tea finish




  • Chai-Colada

    • 2oz Oregon Chai Unsweetened Chai Tea Latte Concentrate

    • 2oz pineapple juice

    • 6oz coconut milk

    • Fill glass with ice and pour in mixture

    • Garnish with lime wedge

      • Inspired by a pina colada, here the chai takes over to replace the funky lingering spiced rum




  • Blended Peppermint Chai

    • 2oz Oregon Chai Unsweetened Chai Tea Latte Concentrate

    • 0.5oz DaVinci Gourmet Peppermint Syrup

    • 2oz water

    • 2 scoops Big Train Vanilla Smoothie Base

    • 1.5 cups ice

    • Blend, garnish with mint sprig

      • Layers of flavor that are spicy and sweet, cool and refreshing temperature and lingering mint flavor




  • Iced Dark Chai Espresso

    • 2oz Oregon Chai Unsweetened Chai Tea Latte Concentrate

    • 1oz espresso

    • 1oz DaVinci Gourmet Chocolate Sauce

    • 8oz milk

    • Fill glass with ice and pour in mixture

      • Classic mix of all things fall and decadent

  • Apple Butter Chai Latte

    • 7oz Oregon Chai Unsweetened Chai Tea Latte Concentrate

    • 7oz oat milk

    • 2oz apple butter

    • Steam together, or pour over ice

      • Perfectly fall with rich layers of apple in the finish

May The Pours Be With You • May 2021

In honor of the Star Wars sagas, because the phrase “May the 4th be with you” we decided to focus on the movie as the theme. We got a bit carried away and completed 10 total cocktails for this month.

Each one inspired by a Star Wars character, and arranged by the Rebellion and the Empire.

The C3Pisco Sour has a dash or 2 of turmeric powder and some salt. We use a ‘dry shake’ technique to help the egg white to mix in the best (in our opinion). Another popular way to enjoy Pisco Sours is blended with ice.

We created 2 different Saber Sodas. Co-owner Derrick has a birthday that lands in April, as chance would have it he was gifted a set of light up light sabers that we used as a garnish

The Boba Tea Fett was a fun challenge. We experimented with boba tea but found it far too challenging to use at this time. So our Lead Bartender asked the simple question “Would cherries on bottom work?” Which was amazing, because the finished cocktail was a little short, by adding in 12 cherries to the bottom of the mug the whole liquid rose to the brim. We liked the idea of a red to green gradient, so we used a 50/50 mix of coconut milk and cherry juice. Top matcha top provided 2 primary outcomes (1) it allowed for tea which was in the name, and (2) it completed the color we needed to look like Boba Fett himself.

A large amount of our decor has come from Facebook Marketplace. For all of May we set out several toys and let people play with them as they wished, we were fortunate no one stole the figurines.

The idea with our Jaba The Hut Juice was to create something green and goopy like the character itself. To achieve the goop we blended aloe vera and cactus, it was truly goopy.We had to filter it a few times. After the a few pulse blends with tequila, Midori a melon liqueur, lime juice, salt, and one small amount of mint created a great balance. The garnish was a kiwi fruit, something tart and tasty but which also has a repulsive exterior.

Quarantini Menu • March 2021

How the time flies……

Each drink is based on an event in 2020, too many to count, but here are our selected 5 events. Laid out chronologically on a menu-timeline of sorts.

Brush Fire $15

Four Roses Bourbon, lemon juice, egg white. Shaken and served up with a eucalyptus garnish.

Why this cocktail: in remembrance of the extreme fires in Australia. A play on a whiskey sour using a sage syrup.

Quarantini $8

Chambord, heavy cream, vanilla vodka, simple syrup, EmergenC powder garnish.

Why this cocktail: at the beginning of the quarantine alcohol sales skyrocketed. Sales of cocktail bitters went up 82% in the USA alone. Most of the foodservice industry was sent home and started experimenting with EmergenC and boom - the quarantini was created.

Killer Bee’s (Knees) $7

Gin, habanero honey syrup, lemon juice. Shaken and served up. Ask for it double hot and we will use our secret stash of extra hot habanero syrup

Why this cocktail: remember when the killer bees started to show up in the USA? No? Also a Bee’s Knees is an amazing classic cocktail.

Dalgona Coffee Cocktail $10

Coffee foam (sugar, coffee, Disaronno, gums, water) floated on top of spiced rum, milk, caramel sauce. Enjoy layered or mix it together for a boozy coffee.

Why this cocktail: as the quarantine extended more and more people started downloading TikTok and also making food at home. The Dalgona Coffee recipe first showed up in Japan, quickly spreading around the world. Think of this drink is almost a White Russian, but more well traveled. And, living in a digital world.

Fauci-Ouchi $10

Scotch, lemon juice, honey, 1 rinse of Laphroaig and 2 rinses of Averna.

Why this cocktail: its a take on The Penicillin cocktail, the name penicillin and the pairing with Dr Fauci had to be done. To make it special and Dr. Fauci themed we used a double dose of ‘mist shots’ instead of a float at the end. Here we used 2 different spirits, like the double vaccines. First with scotch as the cocktail calls for, but 2 sprays then with Averna, in reference to his painter father from Italy.

We hope you can look back on 2020 and remember the good things that happened. For us at 5BAR 2020 was an incredible year of growth. The 3.5 year long dream of creating a welcoming space was finally able to come to life, in the midst of so much chaos.
